About Carmine’s Ocean Grille

I want to know what passion is. I want to feel something strongly.

– Aldous Huxley, Brave New World

Carmine’s Ocean Grill and Sushi Bar, located in Palm Beach Gardens, boasts the reputation as the premiere dining destination in the area.  Known for our immense selection of menu items tailored to accommodate the tastes of any palate, Ocean Grill & Sushi Bar is not your ordinary sushi and seafood grill. You can relish in some of the finest in fresh seafood, sushi, raw bar, steaks, pastas, and creative signature cocktails, while enjoying beautiful sunsets on our patio terrace.

One of the unique aspects of Ocean Grill is the robata grilling, a rustic form of Japanese grilling that taps into the ancient custom of cooking in a charcoal-fired hearth. This specialty grill adds a smoky flavor to all grilled items and evokes an array of taste and adventure in every meal.

Our specialty drinks have an innovative twist making each creation incredible. Some of the favorites include the Asian Pear Martini, Fresh Watermelon Margarita, Lychee Martini and of course our full wine and sake list is available.

The immaculate service at Ocean Grill will make your meal memorable in addition to offering a quality dining destination with a variety of meal creations. Its indoor dining setting is simplistic yet elegant, with beautiful waterfront views that make guests feel pampered and relaxed.

For private events, we offer an intimate private dining room, with a pull down screen for projection, and menus can be tailored to meet the needs of your guests. We also also offer the possibility of an exclusive buyout of the entire restaurant. Our highly trained wait staff is ready and willing to suit the needs of any guest.

Whether you’re ready to socialize during happy hour, make it a date night, or a family night out, we invite you to join us at Carmine’s Ocean Grill & Sushi Bar and experience the waterfront atmosphere while putting an authentic twist on cuisines and drinks!

Peng is a seasoned veteran in Hospitality services. He has thrived in the hospitality arena for more than a decade, working in hotels and restaurants all over the world. Peng began his studies at the Institut Hotelier, “Cesar Ritz” in Le Bouveret, Switzerland. That was when Peng decided he wanted to one day create a place where people knew how much their business was valued. Through his continuing education, he learned that the true focus of hospitality, was serving others and that was what he aimed to do. Peng learned every aspect of the industry by “doing it all.” He went from tending bar in the fine restaurants of Switzerland, to serving French Cuisine. He worked at the Breakers Hotel on Palm Beach Island for 6 years before managing Asian and Latin Restaurants and also managed a night club.

To say Peng Li is “a great host” is an understatement! Today, Peng is delighted to expand his hospitality and his fine dining service standards with Carmine’s Ocean Grill.

Alexander Sutherland

Executive Chef

Young and innovative, Chef Alexander Sutherland has always had an eye for presentation. So when Carmine’s Ocean Grille, needed a new flare, he fit the bill with his pioneering dish creations. From early on, Chef Alexander Sutherland knew he had a passion for creating food to please his family and friends, and yes that is how he describes his clientele. He pursued his culinary studies at The Florida Culinary Institute. Sutherland began his career as a Sous Chef for a gourmet Italian family restaurant.

His taste for “the finer ingredients in life,” eventually brought Sutherland to Palm Beach Gardens, where he became a Sous Chef for the upscale; Oakwood Grille. It was not long before Sutherland climbed the culinary ladder and became the Executive Chef of Carmine’s Ocean Grill. Creating plates of seafood cuisine and sushi has rekindled Chef Sutherland’s love of cooking for family and friends.

‘Indy’

Sushi Chef

A native to Thailand, Chef Indy is no stranger to the belief that food is a social occasion in itself!, “There’s always a reason to celebrate when you can indulge your palate,” he says. Chef Indy came to America at the young age of 15, inspired to blend culture with his love for food and creation. It was in Louisiana, where Indy began working at a Japanese restaurant that he learned more about different ingredients and sauce making. He would prepare different kinds of fresh fish on a daily basis. Preparation for the fish, clams, crab, and sea urchins, were timely, but Chef Indy believes the more time put into his food, the more love it sends out. Soon Indy became head Sushi Chef, which cultivated his enthusiasm for Japanese Cuisine. In 2006, he moved to Palm Beach Gardens, where he continues his same preparation skills, and crafts the best sushi cuisine at Carmine’s Ocean Grille.
